Lovely Lychee
This Pink Grapefruit Gin, Lychee & Lime cocktail is a vibrant, exotic drink that’s perfect for summer gatherings or when you’re in the mood for something unique and refreshing.
Ingredients:

2 oz (60 ml) POSH gin
- 1 oz (30 ml) lychee juice (from canned lychees) or 4-5 fresh lychees, peeled and pitted
- 1/2 oz (15 ml) lime juice (freshly squeezed)
- 1/2 oz (15 ml) simple syrup (adjust to taste)
- Ice
- Club soda or sparkling water
- Lychee fruit or lime wheel for garnish
- Mint leaves (optional)
Instructions:
- Muddle the Lychee in a shaker until they release their juices.
- In a cocktail shaker, combine the POSH gin, muddled, lime juice, and simple syrup.
- Fill the shaker with ice and shake well until the mixture is chilled, about 15-20 seconds.
- Strain the mixture into a glass filled with ice. You can double strain to remove lychee bits if you prefer a smoother drink.
- Top with a splash of club soda or sparkling water for a light fizz.
- Garnish with a whole lychee fruit, a lime wheel, or a sprig of fresh mint for an extra burst of flavor and aroma.
